I downloaded the 8/30 spin of Lubuntu and there were ZERO nvidia issues and the installer gave me the option to replace a partition (which I couldn't find in the kubuntu 18.04 installer) and it asked where to install the EFI files and actually installed where I directed it! So now I have to start digging further to find anything that doesn't work in Lubuntu 18.10

As soon as you use the monitor settings to set where the three monitors go - click apply and you are logged out.  Log back in and it has done what you wanted.  Moving onto nvidia setup :)
