Interestingly enough, after a re-boot, it successfully auto-set my TZ to US-Eastern, even though it was not that way in Ubiquity. Maybe it queried something in VMWare, or maybe the bug (https://bugs.launchpad.net/ubuntu/+source/ubiquity/+bug/1916331) is not all that serious.
