For additive/subtractive synthisis: zynaddsubfx or yoshimi. For piano: pianotech (non-free) for B3:setBfree. for pipe organ: aeolus. [23:09] For a dx7 type synth: dexed. [23:12] fluidsynth does have piano sounds too and there are sample player plugins around (I don't remember their name) but I like the dynamics of pianotech (speaking as a non-piano player :)
